Any more meals like these without showing something that originally had feet of some sort and I’ll have to rename this site No Excuses FishBQ. You’ll just have to trust me that there really was something other than fish cooked between this post and the last one.
But tonight you will just have to gaze upon a cod fillet dusted with Cajun Seasoning mix and grilled to perfection on the BS Keg. And then turned into tacos.
Fish tacos are normally made with corn tortillas around here, but not when the corn tortillas in the refrigerator have decided to be blue corn tortillas. And not that kind, the kind that has a nice layer of fuzz. Needless to say, the fish tacos almost got turned into fish burritos.
But what is one to do when there is a ton of fresh, homemade pico de gallo begging to be used? One tosses the fuzzy, blue tortillas and uses what one has on hand, that’s what.
And stay tuned for proof that something other than fish gets cooked around here. Rumor has it that Tuesday’s post will feature something that goes moo along with something that goes oink…
