SWMBO doesn’t like peppers. Or onions. Or an excess of cilantro. Even with the poblano peppers removed, this meal was a non-starter for her right from the beginning.
I have to at least give her credit for trying a bite. But for those of us that like peppers, onions, and cilantro, tonight’s dinner was fabulous.
The poblano peppers were stuffed with a mixture of ground bison, brown rice, red onions, Anaheim and mini bell peppers, mushrooms, cilantro, cayenne pepper, fresh ground black pepper, salt, and about 3/4 of a can of tomato sauce. They went on the vented pizza plate and spent about 45 minutes in the BS Keg running at about 375°F.
All I can say is that I’m not unhappy that the wife’s portion was leftover. Her loss, my gain…
