Happy Easter Ham

img_0417Thinking that having rabbit on the smoker today would likely be sacrilegious, I decided to go with the more traditional ham for Easter.  Trimmings were both traditional and non-traditional; I don’t ever remember having anything bacon-wrapped on Easter before…

On the grill:

  • Twice-smoked Ham
  • Baked Sweet Potatoes
  • Smoked BBQ Beans
  • Bacon-wrapped Stuffed Mini Peppers

And if all that wasn’t enough, my lovely spouse made her infamous Green Bean Casserole that I have not yet been allowed to attempt to cook outdoors.  All of the rest went on the WSM between 11:20 and 11:45; I got backed up by a late breakfast then went out and started the smoker before the beans were prepared, then waited to put the ham on until they were ready.  Sweet potatoes went on a few minutes after the ham ( I was distracted by something shiny and forgot them as well), and the bacon-wrapped stuffed mini peppers went on last.

Naturally, the last thing on was the first thing off.  Those of us in the house that like peppers (that would be half of us) enjoyed them immensely.  They were stuffed with mushrooms, canadian bacon, and parmesan cheese sprinkled with a light dusting of cajun seasoning, then wrapped in bacon and skewered with toothpicks to hold them together.  As for those that don’t like peppers, all I can say is it left more for those of us that do…

The rest of the meal came together quite nicely and was ready to eat pretty much all at once.  The ham was quite tasty, and having the beans directly under it catching the drippings was a stroke of genius.  Even the spouse commented on how good they were, and she isn’t normally real impressed by BBQ beans.  I can’t take the credit for the idea; I saw it on the BBQ-Brethren forum earlier this week and lifted a recipe as well as the drippings concept.  The rest of the meal was good as well, and as always, the spousal unit outdid herself with the green bean casserole.  All in all, a happy Easter…

Drip, drip, drip…  Anyone getting up for Easter Sunrise service around here was likely disappointed, as it started drizzling around 05:30 (don’t ask how I know; the mascot was barking and had to go out) and continued to drip most of the day.  I guess that is what I get for putting the canopy away properly while cleaning the garage yesterday; my wife suggested that next time I take a better look at the weather forecast before going to all the trouble…
