Cabbage Slaw

Here’s a dead simple recipe for making a batch of cabbage slaw that can go on your pulled pork sandwiches or be eaten as a side dish with just about anything.  Unlike a lot of other slaws, this one has a real nice bite to it and relies on the veggies for what little sweetness it has.

Ingredients

4 parts cabbage
1 part purple cabbage
carrots for a bit of flavour and colour.
  • 4 parts cabbage
  • 1 part purple cabbage
  • Carrots for a bit of flavour and color
  • Equal parts mayonnaise and red wine vinegar (or apple cider vinegar)
  • Additional seasonings (salt, pepper, granulated garlic, etc.) to taste

Directions

Finely chop or shred cabbage in a large bowl.  Shred carrots into bowl, and mix all the veggies well while still dry.  Add in equal parts of mayonnaise and red wine vinegar and mix well.  The amount of mayo and vinegar will vary depending on how much slaw you are making; start with a small amount and add more as needed to get the mix damp but not soggy.  Add any additional seasonings; at minimum I recommend a small amount of salt and pepper.
