Cornish Game Hens

img_01001Referred to in our house as “baby chickens”, Cornish Game Hens give everyone the chance at their favorite part of the bird.  Cook up extra and have them for lunch the next day…

  • 4 Cornish Game Hens
  • 1/2 cup white wine
  • 1 tbs. basil
  • 1 tbs. parsley
  • 1 tbs. garlic salt
  • Fresh ground pepper to taste

Cut the birds in half down the breastbone.  Combine in a marinating container with all the other ingredients and shake well.  Let sit for about 20 minutes before cooking.  Using indirect cooking techniques, place on the grill with the skin up for about 15 minutes.  Turn them over, pour any remaining marinade evenly over the meat, and cook for about another 15 minutes until the skin is crisp and juices run clear when you prick the thigh (over 165º in the deepest part of the thigh if you prefer to use an instant-read thermometer).  Serves 8 if you don’t want leftovers…
