Here is another easy dessert that is sure to impress your friends. All you have to do is convince the teetotalers that the alcohol from the rum evaporates in the heat and you are good to go…
- 1 pineapple, peeled, cored and cut into 1/2″ to 1″ slices
- 1/2 cup brown sugar
- 2 tbs melted butter
- 2 tbs rum
- 1 tsp cinnamon
Combine the brown sugar, butter, rum, and cinnamon and mix thoroughly. Brush the mix over the pineapple slices. Place on the grill directly over the coals and grill at a high heat for about 1-2 minutes per side or until lightly browned. Remove from grill and enjoy. For those looking for an extra treat, place a scoop of vanilla ice cream over the top of each pineapple slice.
