Mahi-mahi with Peach-Pineapple Salsa
We like mahi-mahi at No Excuses BBQ. Here’s a variation that is healthy, light, and perfect for a late-spring or early summer dinner when fresh peaches are readily available. Serve it up with some brown rice and fresh veggies for a well-rounded meal.
Start by making up a batch of Peach-pineapple Salsa. You’ll want to do this before you start the coals as it needs to sit for at least 30 minutes before serving.
Sprinkle the mahi-mahi lightly with fresh ground pepper and dried basil. Cook indirectly until the internal temperature reaches 130°F (about 15 minutes). Remove from grill, move to plate, spoon salsa over the top, and sit back and enjoy…
