OPM in foil

opmOPM doesn’t stand for Other People Money here; it’s Onions, Peppers, and Mushrooms.  Steam them in a foil pouch for some good eatin’…

  • 1 medium onion
  • 1 large bell pepper (any color)
  • 4-5 large white mushrooms (the common supermarket variety)
  • 1 tbs olive oil
  • 1 tbs minced garlic
  • dash of salt
  • fresh ground pepper to taste

Chop up the onion and pepper into 1/2 inch chunks.  Slice the mushrooms in half, and then into 1/4 inch slices.  Pile the onions and peppers on a sheet of aluminum foil, then pile the mushrooms on top of this.  Add the garlic and sprinkle the olive oil and other spices evenly over the pile.  Fold the foil over the top of the mixture and seal the sides and end (more folding).  Place the foil pouch on the grill with the onions on the bottom.  

Cooking time varies on grill placement; if you want this done sooner, put it right over the coals.  If you aren’t in a hurry, put this on early in the cooking process wherever you can find space and let them steam in their own juices.  Allow at least 15 minutes if cooking over direct coals, 30 if cooking indirect.

Be careful when opening up the foil to get at the goodness inside.  Steam can build up and make for a mighty unpleasant burn.  I usually open the end away from the fold and dump the whole thing into a bowl to mix.
