Peach-Pineapple Salsa

Here is a fresh fruit salsa that is easy to make and goes great with fish, chicken, or even lean cuts of pork.  For some real fun, try it on fish tacos.

Ingredients:

  • 2 fresh peaches, peeled and chopped
  • 1/2 cup fresh pineapple, chopped
  • 1 small lime
  • 1/4 sweet onion, chopped
  • 3 tbs. fresh cilantro, chopped
  • 3 tbs. jalapeño peppers, finely chopped
  • 2 tsp. honey

Add all the ingredients together in a bowl and mix well.  Chill and let sit for at least 30 minutes prior to serving.

Great salsa. I served with mahi mahi, sauted shrimp, parmesan couscous, and salad.
Note: Senior take on the salsa – Canned peaches and pineapple – white wine vinegar, light brown sugar, honey and had to leave off onions. Gave it all a quick saute and topped with dried garden mint. Chilled and served.

Nice variation, especially for those that have issues with onions.
