These aren’t those dried out shoe-leather pork chops that have been on the grill too long, but juicy and flavorful. The secret is to buy the thick pork loins, cook them indirect, and take them off at the right time. Here’s what you need for marinade for 4-6 chops:
- 1/2 cup white wine (Chardonnay is good)
- 1 tbs. soy sauce
- 1 tsp. granulated garlic (or garlic powder)
- 1 tbs. dried basil (crushed)
Mix all the ingredients together and pour over the chops in a marinade dish. Let sit for at least an hour or two before cooking. Heat the BBQ up to 350°F-375°F. Using indirect cooking, put the chops on the grill, cover, and let cook. Turn the chops over at the 15 minute mark and pour on any remaining marinade. Cover and cook for another 15 minutes. Check the internal temperature of the chops and remove from the grill when they reach 145°F-150°F. Serve and enjoy!
