Pulled Chicken
Here’s an easy recipe using boneless, skinless chicken thighs that is sure to please. If you make a big enough batch there might even be leftovers…
- 4 lbs boneless, skinless chicken thighs
- 1/2 cup basic rib rub
- 1/4 cup Kirkland Organic No-salt Seasoning mix
- 2 tbs rosemary
- 2 tbs thyme
Mix all the dry ingredients well. Thoroughly coat the chicken thighs with the spice mixture and let sit for about 30 minutes. Cook indirectly on a grill or a smoker with a lid temperature of at least 325°F. Turn once during the cooking process, and remove when the internal temperature of the chicken reaches 180°F. Let rest for about 10-15 minutes, and using two forks, shred the chicken into smaller chunks.
The chicken can be served by itself, over rice (we like it over brown rice), or on bread or buns for pulled chicken sandwiches. Add your favorite BBQ and/or hot sauce (or not; your choice) and enjoy…

I do not have a membership to costcos so what can i use in substitute for the kirkland seasoning?

Not really sure; I think the closest thing would be something like the salt-free Mrs. Dash seasoning blend. Ingredients on the Kirkland brand are as follows (many are preceded by the word “organic”; I’ll leave that out): onion, garlic, carrot, black pepper, red bell pepper, tomato granules, orange peel, parsley, bay leaves, thyme, basil, celery, lemon peel, oregano, savory, mustard seed, cumin, marjoram, coriander, cayenne pepper, citric acid, and rosemary.
Basically open up your spice cabinet and start throwing stuff in…
Holy crap. forgot bout this post. Been busy slaving away for school. Have not touched my grill or smoker for almost a month.
Thats a whole bunch of stuff in that seasoning mix. Ill have to see what i can find at walmart. Or maybe renew my costco crad.

If you have a WinCo where you live you can get a lot of those spices (or some like them) in bulk pretty cheap. Another good source is Cash & Carry, especially if you use large quantities like I do. It’s almost always cheaper to buy them in bulk than in the small bottles in supermarkets…
