Pulled Pork Pasta
We never seem to have any issues eating up leftovers, especially when it is pulled pork. For those that are tired of sandwiches, tacos, and just plain leftover pulled pork, here is yet another option.
- 2 cups leftover pulled pork
- 1-28 oz. can crushed tomatoes
- 1-6 oz. can tomato paste
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/2 tsp. Italian seasoning
- 1-6 oz. tomato can of red wine
- 1-16 oz. package bow tie pasta
- Parmesan cheese
Combine tomatoes, tomato paste, and spices in large pot. Pour red wine into 6 oz. tomato sauce can and add to sauce mixture. Bring sauce to low boil over medium heat and reduce to simmer. Heat pulled pork in microwave for 60-90 seconds. Drain fat and combine with sauce.
Cook pasta according to package directions. Drain pasta and add sauce. Sprinkle on grated parmesan cheese to taste.
For variations on this recipe, add some minced garlic, sliced mushrooms, or substitute pulled chicken for the pulled pork.
